APPLE-BERRY COUSCOUS
1 tsp. canola oil
2 medium apples, peeled, cut in 1/2 inch pieces (2 cups)
1/4 cup dried cherries or cranberries1/4 cup raisins
3 tbsp. currants
3 tbsp. light brown sugar
1 tsp. cinnamon
2 cups unsweetened apple juice
1/2 cup water
1 tsp. coarsely grated lime zest
3 tbsp. fresh lime juice
1-2/3 cups uncooked couscous
Heat large saucepan over low heat. Pour oil into pan. Swirl to coat bottom. Stir in apple, cherries, raisins, currants, brown sugar and cinnamon. Cook, covered, 10 minutes or until apples have released some of their juices. Stir occasionally.
Stir in apple juice, water, lime zest and lime juice. Increase heat to high. Cover and bring to boil.
Stir in couscous. Cover pan and remove from heat. Let stand 15 minutes.
Just before serving, fluff with fork.
Makes 6 servings; 340 calories, 76 g carbohydrate, 1 g fat, no cholesterol, 7 mg sodium, 8 g protein and 5 dietary fiber each. Dietary exchanges: 3 carbohydrate, 2 fruit.
